Mexican Street Corn Takes Dinner to A Whole New Level

Everyone knows corn is good. Corn is one of the best things you can eat. It’s good in other foods, it’s good on its own. But is there a definitive best way to enjoy corn? Yes, there is. It’s roasted and served with cilantro, jalapeno, and lime.

Ingredients:

  • Several ears of corn
  • 1 tbsp of vegetable oil
  • 2 tbsp of mayonnaise
  • 1 jalapeno pepper
  • 2 ounces of feta
  • lime (or lime juice)
  • 1/2 cup of cilantro

Directions:

  • Heat the oil on a skillet and add your corn. Don’t stir it, just let it char for 3 minutes or so. Stir once or twice more for a moment and char for another 3 minutes each time.
  • Add the rest of those ingredients and serve immediately. Salt to taste.
