This Cheesecake Stuffed Cupcake Recipe Shows It’s What’s On The Inside That Counts

As I try to think of something clever or insightful to say about this recipe, I find myself coming back to the same three words: Cheesecake. Stuffed. Cupcakes. That is all.

Cheesecake Stuffed Cupcake Recipe:

  • Boxed chocolate cupcake mix + required ingredients as stated on the box (often eggs, water, oil)
  • Cheesecake bites (you can find these in the freezer section at Target) OR cheesecake cut into bite-size pieces
  • Cocoa powder
  • Vanilla
  • Salt
  • Powdered Sugar
  • Butter, 2 sticks
  • Heavy Cream
  • Cupcake liners
  • Muffin pan

Preheat the oven to 350 degrees and prepare your cupcake batter according to box instructions. Place cupcake liners in your pan, then fill the liners with batter about halfway. Place one cheesecake bite on top of the batter in each cupcake, then top with more batter to cover. Bake for 25 minutes, then allow to cool completely.

To make your frosting, combine butter (softened), powdered sugar, cocoa powder, vanilla and salt in a large bowl and mix well. Add in about a 1/4 cup of heavy cream to make a smooth consistency. Ice the cooled cupcakes and enjoy!
