This One-Pan Chicken Fajita Recipe Is The Only Fajita Recipe You’ll Ever Need

There are few things I love more in this world than Mexican food, and there are few things I hate more in this world than doing dishes. That’s what makes this recipe a Godsend.

It’s easy, super flavorful, and like the title states, it requires only one pan.

Easy One-Pan Chicken Fajita Recipe:


  • 1.5 lbs boneless, skinless chicken breast
  • Bell peppers (assorted)
  • 1 yellow onion
  • 1/2 tsp coriander
  • 1 tsp paprika
  • 1 1/2 tsp cumin
  • 2 tsp chili powder
  • pinch of salt & pepper
  • 2 tbsp minced garlic
  • 3 tbsp olive oil
  • Flour tortillas (or corn if you prefer)
  • Optional toppings: Lime, cilantro, sour cream, tomatoes, cheese, avocado


Preheat your oven to 400 degrees and spray your pan with a non-stick cooking spray. In a small bowl, combine cumin, paprika, coriander, chili powder, salt and pepper and set aside. Slice the peppers and onions lengthwise into strips, and slice your chicken breast into even strips. Combine the chopped peppers, onion, and chicken into a bowl and add in your seasoning mixture, along with the minced garlic and a drizzle of olive oil. Toss until evenly coated, then pour the contents out onto your greased pan. Cook for 20-25 minutes, tossing once about halfway through cooking. Serve on warm tortillas, top as you’d like, and enjoy!
