How To Make Cranberry Orange Muffins That Will Brighten Your Morning

Cranberry and orange is one of my favorite fruit combinations of all time. The sweetness of the orange perfectly complements the tartness of the cranberries and it’s practically a foolproof combo.

Cranberry orange muffins would be the very best way to start your day, don’t you think? Pair one with a hot cup of coffee to start your day on the right foot!

Cranberry Orange Muffin Recipe:

  • 2 & ½ cups all-purpose flour
  • 4 tsp baking powder
  • ½ tsp salt
  • ½ cup vegetable oil
  • 1 & ¼ cups sugar
  • 2 large eggs
  • ½ cup milk
  • zest of one orange
  • 1 tsp vanilla extract
  • ¼ cup freshly squeezed orange juice
  • 1 &1/2 cups fresh cranberries
Preheat your oven to 425 degrees, then spray down a 12-cup muffin tray with non-stick spray, or put in muffin/cupcake liners. In large bowl, mix together the flour, baking powder and salt, and set the mixture aside. In another bowl, mix the vegetable oil, sugar, eggs, milk, orange juice, vanilla, and orange zest. Add the dry ingredients to the mixture slowly, stirring until just combined, then add in the cranberries. Pour the batter evenly into the muffin cups and bake for 5 minutes at 425 degrees. Then, reduce the oven to 375 degrees and bake for another 13-15 minutes.
