Skillet Blueberry Crumble Is Perfect For Camping Or A Lazy Sunday

-

I love cooking but hate doing dishes, so anytime I can find a delicious recipe that only calls for one pan, I get excited. I was interested in this blueberry crumble recipe, but once I tasted it, I knew that I would wash every pot and pan in my kitchen if it meant I could get just one more spoonful of the stuff. You can eat it for breakfast, dessert, over ice cream, or on the Appalachian Trail.

Blueberry Filling Ingredients

– 6 cups blueberries

– ⅛  cup white sugar

– 1 tbsp lemon juice

– 1 tbsp potato starch

– ¼ tsp cinnamon

Crumble Topping Ingredients

– 2 cups all-purpose flour

– 3/4 cup white sugar

– 1/2 cup brown sugar

– ½ cup sliced almonds

– 1 ½ cup rolled oats

– 1 ½ sticks butter, room temperature

– ½ tsp almond or vanilla extract

1. Preheat oven to 375°

2. Mix soft butter and sugar until smooth. Add almond extract and dry ingredients and mix. Set aside.

3. In a separate bowl mix all filling ingredients.

4. Lightly butter your cast iron skillet and pour in blueberry filling mixture. Top with crumble mixture and bake 30-35 min until bubbly and top is golden brown.
