I know what you’re thinking– “un-fried” chicken? Why?! But hear me out– if you’re looking for an easy baked chicken recipe, this should be your go-to. It’s easy to make and, believe it or not, actually tastes like fried chicken, minus you having to break out your deep fryer.
The recipe takes about an hour to make and serves four, and comes from the kitchen of Trisha Yearwood (so you know it’s good). In fact, it might just be the best baked chicken we’ve had yet!
Trisha’s Un-Fried Chicken Recipe:
- 1 cup of buttermilk
- 1 tbsp hot sauce
- 4 boneless, skinless chicken breast
- 1 1/2 cups multi-grain panko breadcrumbs
- 3 tbsp grated Parmesan
- 1 lemon, quartered, plus 1 tbsp lemon zest
- 1 tsp red pepper flakes
In a small bowl, combine buttermilk and hot sauce. Season the chicken with salt and black pepper and place each breast in the buttermilk mixture. In another bowl, combine breadcrumbs, Parmesan, lemon zest, red pepper flakes, salt and pepper. Remove the chicken from the buttermilk mixture and place in the breadcrumb mixture until coated evenly. Lay each piece of chicken flat on a baking sheet and refrigerate uncovered for about 30 minutes.
Preheat the oven to 400 degrees and bake the chicken for 20-25 minutes until cooked through. Squeeze lemon over the chicken to serve and enjoy!
