For me, mornings are hardest, most dreaded part of the day. Crawling out of my nice, warm bed to take on whatever tasks and challenges the day has waiting for me always seems daunting and chore-like.

But, even when my attitude isn’t great and I’d rather be sleeping the day away, there’s nothing that says, “Hey, I know it’s morning, but everything is going to be okay,” quite like a warm, fluffy stack of pancakes.

4 Pancake Recipes That are Worth Getting Out of Bed For:

1. Cinnamon Roll Pancakes

Ingredients:

  • 4 tablespoons unsalted butter, melted
  • 1/3 cup light brown sugar, packed
  • 1/2 tablespoon ground cinnamon
  • 4 tablespoons unsalted butter
  • 2-ounces cream cheese, at room temperature
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg, lightly beaten
  • 1 tablespoon canola or vegetable oil
Filling Directions:
  1. Mix together butter, brown sugar and cinnamon.
  2. Pour the filling into a large zip top bag.
  3. Set aside.
Glaze Directions:
  1. In a small saucepan, melt butter.
  2. Once melted, turn off heat and whisk in cream cheese until mixture is smooth.
  3. Add powdered sugar and vanilla extract and stir until combined.
  4. Set aside.
Pancake Directions:
  1. Mix together flour, baking powder, salt, milk, egg and oil. Stir until well combined.
  2. Preheat your pan or griddle over medium heat and coat with butter or cooking spray.
  3. For one pancake, pour about 1/3 cup of batter onto the pan.
  4. Reduce heat to low temperature.
  5. Cut one corner of your filling bag to create a small hole.
  6. When your pancake begins to form bubbles on the top, squirt the filling in a circular motion on top of the pancake.
  7. Cook the pancake for 2-3 minutes on each side, or until golden brown.
  8. Once done, top with glaze.
  9. Enjoy!

Pancake Ingredients:

  • 6 tablespoons unsalted butter
  • 2 1/4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 cups buttermilk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • 2/3 cup rainbow sprinkles
Glaze Ingredients:
  • 1/2 cup confectioners sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons heavy cream or milk
Directions
  1. Melt butter in microwave and set aside to let cool slightly.
  2. In a large bowl, combine flour, sugar, baking powder and salt.
  3. In another bowl, whisk together eggs, buttermilk, vanilla and almond extract until well combined.
  4. Whisk in melted butter.
  5. Pour the wet ingredients into the dry ingredients and stir until well combines.
  6. Very gently, fold in sprinkles.
  7. Preheat your pan or griddle over medium heat and coat with butter.
  8. For one pancake, pour about 1/4 cup of batter onto the pan.
  9. Cook until edges are golden brown and middle is bubbling, then flip.
  10. Whisk glaze ingredients together and pour over warm pancake.
  11. Top with extra sprinkles.
  12. Enjoy!
3. Fluffy Blueberry Pancakes

Ingredients:

  • 3 large eggs
  • 1 cup sour cream
  • 3 tablespoons whole milk
  • 3 tablespoons dark brown sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 2/3 cups + 2 tablespoons all-purpose flour
  • 1 1/2 cups fresh blueberries
  • 4 tablespoons butter, for the pan
  • maple syrup
Directions:
  1. Whisk together the egg yolks, sour cream, milk, sugar, salt, vanilla and baking powder.
  2. In another bowl, combine flour and blueberries. Toss to combine, until blueberries are fully coated in flour.
  3. Add blueberry mixture to wet mixture and stir until combined.
  4. Beat egg whites using a handheld mixer or the whisk attachment until the whites begin to form soft peaks.
  5. Gently fold egg whites into blueberry, milk mixture until fully combined.
  6. Preheat your pan or griddle over medium heat and coat with butter.
  7. For one pancake, pour about 1/3 cup of batter onto the pan.
  8. Cook until edges are golden brown and middle is bubbling, then flip.
  9. Top with pad of butter, syrup and fresh blueberries.

  • 3/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/3 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • zest of two lemons
  • 1/4 cup fresh lemon juice
  • 3 tablespoon butter, melted
  • 1 egg
  • 1 1/2 teaspoon vanilla extract
  • 1/3 cup poppy seeds
  • optional: maple syrup
  • optional: fruit — blueberries, strawberries
Directions:
  1. Combine all dry ingredients.
  2. In another bowl, combine all wet ingredients.
  3. Pour the wet mixture into the dry mixture and mix, but don’t over combine. Lumps are fine.
  4. Preheat your pan or griddle over medium heat and coat with butter.
  5. For one pancake, pour about 1/3 cup of batter onto the pan.
  6. Cook until edges are golden brown and middle is bubbling, then flip.
  7. Top with maple syrup and sliced fruit if desired.
  8. Enjoy!
