I love the start of fall because it’s when I pull out my slow cooker to cook all my meals in. There’s something about doing of all the work beforehand and coming home to a house filled with the aroma and an already-cooked meal.

5 Slow Cooker Chicken Recipes:

Salsa Slow Cooker Chicken

Ingredients:

2 lbs chicken breasts

1 can black beans

1 can rotel

1 can corn

1 taco seasoning packet

1 (small) can enchilada sauce

Directions:

Spray your slow cooker down with pam or olive oil and place the chicken in the bottom. In a separate bowl, combine the (rinsed) black beans, corn and rotel and stir until all are combined. Place on top of the chicken and stir in the enchilada sauce and taco seasoning packet. Cook on low for 4-6 hours or until the chicken is cooked though. Use in tacos, on sandwiches, on top with rice, and in quesadillas.

Slow Cooker Chicken Bacon Ranch

Ingredients:

2 lbs chicken breasts

8 oz block of cream cheese

1 Hidden Valley Ranch Packet (can use spicy or different varieties here)

8 slices cooked bacon

Directions:

Spray down your slow cooker with olive oil or pam and place chicken in the bottom. Sprinkle the ranch packet over the chicken and cook on low for 4-6 hours, or until chicken shreds easily. Stir in softened cream cheese and crumbled cooked bacon and cook for 30 more minutes, or until cream cheese is fully melted and combined.


Barbeque Chicken Thighs

Ingredients:

2 lbs chicken thighs – bone in or boneless will work in a pinch.

1 bottle BBQ sauce

1/3 cup brown sugar

¼ cup honey

Dash of Worcestershire sauce

Directions:

Place your chicken thighs in your slow cooker. In a bowl on the side, combine all of the wet ingredients until fully incorporated. Pour over your chicken thighs, and cook on low for 4-6 hours, flipping halfway in between. Serve with a veggie side, or remove from bone and place back in the slow cooker for another 15 minutes.

Cheesy Buffalo Chicken

Ingredients:

2 lbs chicken thighs

1 bottle Frank’s Hot Sauce

1 Ranch seasoning packet

Directions:

In your slow cooker, pour half of your bottle of Frank’s hot sauce, and half of your ranch seasoning packet. Put your chicken breasts in the slow cooker and stir in the rest of your remaining ingredients. Cook on low for 4-6 hours or on high for 2-4 hours or until chicken is done. Shred chicken and place on top of salads, sandwiches, or in lettuce wraps.

Slow Cooker Orange Ginger Chicken

Ingredients:

2 lbs chicken breast, chopped

1 cup orange juice

1 tbsp coconut oil

1/3 cup honey

1/3 cup soy sauce

red pepper flakes, salt and pepper

1 cup orange marmalade

dash of rice vinegar

Directions:

Spray down your slow cooker with pam or olive oil, and place your chicken in the bottom. Salt and pepper them, and stir all your wet ingredients together in a separate bowl, and pour over your chicken, that is chopped into 2 inch pieces. Cook on low for 4 hours, or until chicken is cooked through. Use on top of white rice, and garnish with green onions.
