1. Slow-Cooker Beef Stroganoff


2 pounds beef stew meat

1 cup chopped onion

1 can (10 3/4 ounces) condensed golden mushroom soup

1 can (10 3/4 ounces) condensed cream of onion soup

1 jar (6 ounces) Green Giant™ sliced mushrooms, drained

1/4 teaspoon pepper

1 package (8 ounces) cream cheese, cubed

1 container (8 ounces) sour cream

6 cups hot cooked noodles or rice


In 3 1/2- to 4 1/2-quart slow cooker, mix beef, onion, soups, mushrooms and pepper. Cover and cook on low heat setting 8 to 10 hours or until beef is very tender.

Stir cream cheese into beef mixture until melted. Stir sour cream into beef mixture. Serve over noodles.

2. Slow Cooker Beef Roast with Bacon-Chili Gravy


4 slices bacon, cut into 1/2-inch pieces

3-pound beef boneless chuck roast

1/2 teaspoon garlic pepper

2 medium carrots, coarsely chopped

1 can (4.5 ounces) Old El Paso™ chopped green chiles

1/4 cup Progresso™ beef flavored broth (from 32-oz container)

1/4 cup chili sauce

1 tablespoon Gold Medal™ all-purpose flour


Cook bacon in 12-inch nonstick skillet over medium heat, stirring occasionally, until brown and crisp; remove from skillet with slotted spoon and drain on paper towels. Reserve bacon fat in skillet.

If beef roast comes in netting or is tied, do not remove. Sprinkle beef with garlic pepper. Cook beef in bacon fat in skillet over medium heat 5 to 6 minutes, turning occasionally, until brown on both sides.

Spray 4- to 5-quart slow cooker with cooking spray. Place beef in cooker. Top with bacon and carrots. Mix green chiles, broth, chili sauce and flour in small bowl; pour over mixture in cooker.

Cover and cook on Low heat setting 10 to 12 hours. Place beef on platter; remove netting or strings. Stir gravy in cooker; serve with beef.

3. Slow Cooker Creamy Beef Dip


2 packages (8 oz each) cream cheese, cut into pieces and softened

2 jars (2.25 oz each) dried beef, chopped (1 1/4 cups)

1 cup shredded Swiss cheese (4 oz)

1/3 cup sliced green onions (about 5 medium)

3/4 teaspoon dry mustard

1/2 cup beer or reduced-sodium beef broth

About 1 1/4 lb sliced pumpernickel cocktail bread


In medium bowl, mix all ingredients except bread. Spoon into 2- to 3-quart slow cooker. Cover and cook on Low heat setting 1 to 2 hours, stirring occasionally, until mixture is melted and hot. Dip will hold on Low heat setting up to 2 hours. Serve with bread.

Sprinkle the top of this warm and cheesy dip with additional sliced green onions or a mixture of chopped green onions and red bell peppers.

4. Slow Cook Beef Chili


2 tablespoons canola oil

1 boneless beef chuck roast (3 to 4 pounds), cut into 1-inch pieces

1 can (15-1/2 ounces) hominy, rinsed and drained

1 can (14-1/2 ounces) reduced-sodium beef broth

1 can (14-1/2 ounces) diced tomatoes, undrained

1 large sweet red pepper, finely chopped

1/2 cup chopped onion

1 can (4 ounces) chopped green chilies

2 garlic cloves, minced

1 tablespoon paprika

1 tablespoon chili powder

2 teaspoons ground cumin

1/2 teaspoon salt

1/2 teaspoon pepper

1-1/2 cups frozen corn

Shredded cheddar cheese and sour cream, optional


In a large skillet, heat oil over medium heat. Brown beef in batches. Remove with a slotted spoon to a 5-qt. slow cooker; discard drippings.

Stir in hominy, broth, tomatoes, red pepper, onion, chilies, garlic and seasonings. Cook, covered on low 6-7 hours or until meat is tender. Stir in corn; heat through. If desired,

serve with cheese and sour cream.

5. Slow Cook Garlic Lover’s Beef Stew


1 boneless beef chuck roast (3 pounds), cut into 2-inch pieces

1-1/4 teaspoons salt

3/4 teaspoon coarsely ground pepper

1/2 cup all-purpose flour

2 tablespoons olive oil

12 garlic cloves, minced

1 cup dry red wine or reduced-sodium beef broth

2 cans (14-1/2 ounces each) diced tomatoes, undrained

1 can (14-1/2 ounces) reduced-sodium beef broth

6 medium carrots, thinly sliced

2 medium onions, chopped

2 tablespoons tomato paste

2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed

2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme

2 bay leaves

Dash ground cloves

Hot mashed potatoes


Sprinkle beef with salt, pepper and flour; toss to coat.

In a large skillet, heat oil over medium-high heat. Brown beef in batches. Remove with a slotted spoon. Reduce heat to medium. Add garlic; cook and stir 1 minute.

Add wine to skillet; stirring to loosen browned bits from pan. Transfer to a 5- or 6-qt. slow cooker. Stir in tomatoes, broth, carrots, onions, tomato paste, rosemary, thyme, bay leaves, cloves and beef.

Cook, covered, on low 8-10 hours or until beef is tender. Remove bay leaves. Serve with mashed potatoes.
