If you’re anything like me, you feel like mac and cheese is the ultimate comfort food. It’s rich, it’s creamy, it’s indulgent and it’s the perfect medicine for a bad day. Mac and cheese is great for a side-dish, but these recipes will definitely be the star of the show.
I’m skipping the made-from-scratch part of these recipes (they are all from the box), but I will still specify what type of mac and cheese to buy for each recipe. We, of course, want to cater to those weird Velveeta and Shells people (who even raised you?).
5 Types of Mac and Cheese to Blow Your Mind:
1. BBQ Chicken Mac and Cheese
- 1 box white cheddar shells mac and cheese, prepared
- 1 bottle molasses and cayenne Archer Farms BBQ sauce (you can get this at Target)
- 4 chicken breasts
- ½ cup water
- salt and pepper
Directions: In a crockpot, pour your full bottle of BBQ sauce and place the seasoned with salt and pepper chicken breasts in the sauce, making sure to cover them. Cook on low for 5 hours, or until chicken shreds easily. Remove chicken when cooked, shred, and place back in the crockpot and use the “keep warm” setting for 30 more minutes. In a bowl, place prepared white cheddar mac and cheese and top with your shredded BBQ chicken.
2. Buffalo Mac and Cheese
- 1 box classic Kraft mac and cheese, prepared
- ½ cup Franks hot sauce
- 2 tbsp butter, melted
- 1/3 cup crumbled blu cheese
- 1/3 cup chopped celery
Directions: Prepare your mac and cheese as directed. When adding the milk and butter, make sure to add your extra butter and hot sauce and stir well. Let sit for 5 minutes, while you heat up the oven to 350 degrees. In a oven safe casserole dish, pour in your mac and cheese, and top with crumbled blu cheese, bake for 10 minutes. Remove, and top with cold chopped celery, a dash of hot sauce and finish with ranch dressing.
3. Green Chile Mac and Cheese
- 1 Velveeta shells and cheese, prepared
- 1 can chopped green chilies
- ½ cup jarred jalapenos, chopped
Directions: After you prepare your mac and cheese, mix in your chopped green chilies and jalapenos. Serve.
4. White Cheddar Truffle Mac
- 3 Lean Cuisine Vermont white cheddar mac packages (microwaved and prepared)
- 1 tbsp truffle oil
- panko breadcrumbs
Directions: Preheat oven to 400 degrees. Heat up your Lean Cusines (No shame!) and transfer them to an oven safe casserole dish, mixing in the truffle oil as needed. Top with panko breadcrumbs and bake until top is golden crispy.
5. Pizza Mac and Cheese
- 1 box cheddar mac and cheese, prepared
- 1 cup shredded mozzarella
- ½ cup pepperoni
- ½ cup pizza sauce
- 1 cup panko breadcrumbs
Directions: Pre-heat oven to 350 degrees. In a casserole dish, spread out your mac and cheese. Top with pizza sauce, cheese, pepperoni and finally breadcrumbs. Bake until cheese is melted and breadcrumbs are golden toasty.
