Spicy Beans and Rice Make For A Healthy Meal You Can Whip Up In No Time

Loaded with spicy flavor, this beans and rice recipe will take you places. You can cook it fully vegetarian, or add in chicken or sausage for people who just can’t miss out on the meat. It’s super easy to throw together, so give it a try.


  • 1 1/2 cups water
  • 1/2 cup uncooked brown rice
  • 2 (15 ounce) cans black beans, undrained
  • 2 fresh jalapeno peppers, seeded and chopped
  • 1 teaspoon ground cumin, or to taste
  • 1 tablespoon chili powder, or to taste
  • black pepper to taste
  • 1/2 cup shredded sharp Cheddar cheese
  • 2 fresh green onions, chopped
  • 1/2 (2 ounce) can sliced black olives, drained
Cook rice according to package directions. Preheat oven to 350 degrees F. Pour beans into casserole dish, sprinkling with jalapenos, cumin, chili powder, and black pepper. Bake for 30 minutes, then sprinkle with cheese, green onions, and olives. Bake for another 5 to 10 minutes. Serve over rice.
