Cashew chicken is hard to resist. Loaded with flavor, spices, and of course, cashews, it’s a dish most of us find hard to pass up when it’s offered. Usually getting some involves a lengthy trip to the takeout window, and a lot of cash out of the wallet. Instead, though, why not try this crockpot cashew chicken? The flavor is just as amazing, and the prep is super easy. Check it out.

Ingredients:

  • 2 lbs boneless skinless chicken breasts
  • 1 cup soy sauce
  • 8 Tbsp rice wine vinegar
  • 8 Tablespoons ketchup
  • 4 Tablespoons sweet chili sauce
  • 4 Tbsp brown sugar
  • 4 garlic cloves, minced
  • 2 tsp grated fresh ginger
  • 1/2 tsp red pepper flakes
  • 1 cup cashews
Directions:
Combine all ingredients minus chicken in a bowl, stirring to combine. Place chicken in crockpot, then top with other ingredients. Cook on low for 3 to 4 hours, serve, and enjoy.
