Everyday is a good day for pie! Especially when the weather’s nice, you can open up your windows and enjoy the weather while getting some baking done.

1. LEMON MERINGUE PIE

Ingredients:

1 (14-ounce) can sweetened condensed milk
1/2 cup lemon juice
1 teaspoon grated lemon zest
3 egg yolks
1 (8-inch) prebaked pie shell or crumb crust

Meringue:

3 egg whites
1/4 teaspoon cream or tartar
1/4 cup sugar

Directions:

Combine milk, lemon juice and zest. Blend in egg yolks. Pour into crust.

Preheat oven to 325 degrees F.

Beat egg whites with cream of tartar until peaks form. Beat in sugar until stiff. Spread over filling. Bake for 12 to 15 minutes, until the meringue is golden brown.

2. KEY LIME PIE

Ingredients:

Graham Cracker Crust
3 large eggs, separated
1 (14-ounce) can sweetened condensed milk
½ cup key lime juice
zest of 2 limes
1 tablespoon lemon juice
2 tablespoons granulated sugar

Directions:

Preheat oven to 325 degrees F. Combine egg yolk, sweetened condensed milk, lime juice, lime zest and lemon juice in a bowl. Beat egg whites with a mixture until the foam. Add granulated sugar and beat until soft peaks form. Gently folk into egg yolk mixture. Spoon into crust. Bake for 15-20 minutes until lightly browned. Chill for at least eight hours.

3. CHOCOLATE PIE

Ingredients:

1 (4 oz.) bar semi-sweet baking chocolate
1/2 c. butter
1 c. granulated sugar
2 large eggs
1 pie crust

Directions:

Spray an 8-inch pie plate with cooking spray. Fit pie crust to plate and set aside. Melt butter and chocolate together in a saucepan over very low heat, stirring continuously. Remove from heat and add sugar. Cool for three minutes. Whisk eggs. Add chocolate. Bake at 350 degrees F for 30 minutes on bottom rack. Move to top rack for 10 minutes.

4. CARAMEL APPLE CRUMBLE PIE

Ingredients:

1/4 cup unsalted butter, melted (half of one stick)
1 large egg
3/4 cup granulated sugar
1/4 cup light brown sugar, loosely measured
1 1/2 teaspoons vanilla extract
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon ground cloves
1/4 teaspoon salt, optional and to taste
3/4 cup all-purpose flour
3/4 cup whole rolled old-fashioned oats (not quick cook or instant)
1 21-ounce can apple pie filling
1 9-inch frozen pie crust

Directions:

Preheat oven to 350 degrees F. Melt butter then allow to cool. Combine butter, egg, sugars, vanilla, cinnamon, allspice, cloves and salt. Add flour and oats. Fold in apple pie filling. Our mixture into pie curst. Bake for 50 to 60 minutes. It’s ready when it’s set and golden.
