I don’t know about you, but Jason Aldean strikes me as a chili and cornbread type of guy. So, when I sat down to write this Eat & Listen, I knew I had to re-create one of my favorite fall meals.

I love making my meals in the crockpot, because it’s kind of like getting something great in the mail. You set it up in the morning, and when you get home from work, your house smells amazing and you have a hearty meal waiting for you. It’s like something magical happened during all those hours you were pushing paper.

I’d like to think this is a meal Jason Aldean might cook for himself. It’s pretty self-explanatory. Although, he might just take pulls of the Comfort instead of using a cocktail shaker to mix a specialty cocktail. You can do whichever– it’s up to you.

The Night Train

“I got a blanket and fifth of Comfort, a little something to knock off the edge…”

Ingredients:

2 oz Southern Comfort

1 oz Grand Mariner

2 oz Ginger Ale

Directions:

In a shaker, shake up the Southern Comfort and Grand Mariner. Over ice, pour your mixture and top with Ginger Ale. If desired, sprinkle a bit of cinnamon sugar over the drink.

Wheels’ Rollin Turkey Chili (Crockpot Recipe!)

“Hearing that crowd, keeps me going, guitars rocking, wheels rolling…”

Ingredients:

1 lb ground turkey

1 green pepper, chopped

1 jar of roasted red peppers

Diced onion (to your taste. I’m not a huge onion fan.)

1 tbsp minced garlic

2 cans of drained and rinsed black beans

1/3 jar of jalapenos

2 cups tomato sauce

1 can of Rotel

1 tbsp Cayenne

1 tbsp Chili Powder

Salt and Pepper to taste

Directions:

In a crockpot, combine all ingredients and cook on low for 6 hours. Make sure your turkey is cooked all the way through. You can top with sour cream, tortilla strips, avocado or my favorite- goat cheese!

’94 Jalapeno Cornbread

“A little feel good you ain’t never felt before…”

Ingredients:

1 box Jiffy Cornbread Mix

About ¼ cup jalapenos (jarred- and depending on your taste. I like things spicy! And so does Joe Diffy)

1 ½ cups of shredded cheddar cheese

Directions:

Prepare cornbread as it reads on the back of the box. When you have your batter, carefully stir in your jalapenos and cheddar. I love cooking my cornbread in a cake pan, so I can cut the pieces into big slices and slather some butter on top.
