Meatloaf is a dish that’s unfortunately stigmatized, hated by multitudes of schoolchildren and dads everywhere. When you say you’re fixing meatloaf for dinner, the kids are hardly excited. Fortunately, they will be with this recipe. This meatloaf is one you’ll finally be excited to serve. Check it out.
- 2 pounds ground beef
- 1 cup crushed Ritz crackers
- 1 egg, beaten
- 1 cup milk
- 1/2 cup ketchup
- 1/3 cup onion, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 3/4 cup ketchup
- 1/4 cup brown sugar
- 1/4 cup apricot preserves
- 1 tablespoon Worcestershire sauce
Preheat oven to 350 degrees F. Coat 5×9 pan with cooking spray, then set aside for later. Combine ground beef, crackers, egg, milk, 1/2 cup ketchup, onion, salt, pepper, and garlic powder in bowl. Stir to combine.
Place mixture in pan and spread evenly. Bake for 1.5 hours.
In another bowl, combine 3/4 cup ketchup, brown sugar, apricot preserves, and Worcestershire sauce. Spread half the mixture over the meatloaf halfway through the bake time. Keep the rest for topping.
