I don’t know about you, but I could pretty much survive only on soup during the cold months of winter. There is just something warm and soothing about a steamy bowl of soup that makes it the ultimate comfort food for me. One of my very favorites is homemade broccoli cheese soup. I like it because the broccoli makes it healthy and the cheese makes it delicious!
I found this super quick video by Tip Hero that shows you exactly how to make the perfect pot of broccoli cheese soup:
Recipe: Broccoli Cheese Soup
5 Tbls butter
1 cup chopped onion
1/2 chopped carrots
2 cloves garlic, chopped
1/4 cup flour
2 cups half and half
2 cups chicken broth
2 cups shredded cheddar cheese
8 oz of frozen chopped broccoli, thawed
Over high heat, melt 1 Tbls of the butter.
Add onion, carrots and garlic, cook until tender, set aside
Over medium heat, melt 4 Tbls butter
Stir in 1/4 cup of flour, mix well
Slowly add half and half
Add chicken broth, let simmer 10 – 15 minutes.
Add cheese by the handful while stirring.
After cheese is completely melted, add onion mixture and broccoli, cook 5 minutes.
Serve it up in a bread bowl and if you really want to make it special, add a side of bacon.
